Slow Food Menu
This menu features fresh, hand made corn tortillas which we make
fresh to order on our comal. It also features items which
require more time for preparation. Please allow time for the
preparation of any of the items on this menu.
We are able to package any of our meals for take-away (except
for the San Juan Platter, which is a sizzle platter, so it would
be missing the point!). Please be aware that if you take them
“to go” the tortillas on the tacos will lose their original
supple, dry consistency.
We do not use any pre-prepared sauces or mixes. All of our food
is made from scratch. Consequently, our food is absolutely msg
free, and artificial additive/preservative free. Anything on
this menu (but not the express menu) is also totally gluten
free. Our black beans are made with canola oil, not lard, so our
vegetarian options are truly vegetarian!
We have worked hard to give you the most impeccably-sourced food
possible. Our pork is grain, fed and non-medicated (that’s as
opposed to pork that is fed meat by-products and given copious
amounts of growth hormones and antibiotics in their feed). And
our beef is locally raised just outside of Duncan on
grassland—they live good lives under the trees. They are
healthy, feeding on spent hops from local breweries, fresh
water, a salt lick and a selenium supplement, that’s it—no
antibiotics, no feedlots.
We are focused on the need for cleanliness and purity of our
sourcing and preparation and we are committed to serving you
healthful, nutritious food.
We have a family, so we understand how hard it is to find good,
healthy food which is also good value (…taken a family of five
out to eat lately?). We are striving to provide the best quality
of food possible at reasonable prices. Please help us to do this
by not requesting any changes or substitutions from this menu.
A final note…some of our recipes call for peanuts—and a variety
of proteins and other potential allergens. if you have serious
or life threatening allergies, please choose not to eat here.
Our kitchen is just too small, and too busy! it’s possible to
make mistakes and we could never live with ourselves if we did
harm to someone. please do not take the risk. our food is
delicious, but still, it’s just not worth it.
